What does the perfect waffle look like to you? I’m willing to bet you’re not into soft and soggy waffles. Personally, I like my waffles crispy on the outside,and soft in the inside. That is in fact how a waffle should come off the waffle plate in caseyou didn’t know. To be real here, I have to confess that I had no idea what a good waffle was supposed to be like until I had my first good waffle just a few years ago.

Since then, I’ve ditched my cheap old waffle maker and invested in a good one. Now we make them more than we ever have. Waffles for breakfast becomes a waffle buffet because we use whatever fruit we have on hand. Even frozen fruit! Sometimes I’ll make homemade strawberry syrup when I have the time, too.

If we have leftover waffles, I put them in a ziplock bag in the fridge for the next morning for mykiddos toreheat in the toaster if I’m not awake yet.

There are two things I ask of them when they fend for themselves in the morning, however. Don’t make a mess, and don’t leave crumbs on the butter.

Keep the crumbs off the butter!

Crumbs on a stick of butter is one of my pet peeves,but because I never buy margarine, it’s a little bit difficult for them to spread butter on their waffles without getting crumbs on the butter. Most of the time they skip the butter altogether and just add syrup because they don’t want to hassle with it. How toavoid making soggy waffles.

Let’s begin with my 3 tips to help you get your waffles crispy on the outside, and soft in the inside.

  1. Get a good quality waffle maker and get it HOT.
  2. Add meringue powder and sugar to the mix
  3. Use a cooling rack (not a plate!) to place them on once they come off the waffle maker.

And since everyone likes a quick and easy recipe, I’m using Walmart’s Complete Extra Fluffy Pancake & Waffle Mix for this recipe.

Start by mixing the pancake and waffle mix with one tablespoon of meringue powder.

A good waffle will always have whipped egg white in it; however, since my goal is to make this a quick and easy waffle recipe, I used meringue powder instead.

Meringue powder eliminates the egg white beating step altogether and helps get the waffles crispy on the outside. Cool, right?!

Next, add water and oil and whisk until most of the lumps disappear.

Then add one heaping tablespoon of granulated sugar, whisk again until combined.

Add the blueberries when done mixing if you’re using them.

Let the batter rest for 4-5 minutes before baking. This would be a good time to turn on your waffle maker to preheat it.

Don’t skip the preheating step. It’s important to preheat your waffle maker and let it get good and HOT. That high heat is what contributes tomaking waffles having that exterior crunch when you bite into them because it starts to cook them as soon as the batter hits the waffle plate.

Use a measuring cup to pour the batter onto the waffle plate. 1 full cup is just the right amount of batter for a full waffle so I use a 1/2 cup size measuring cup. This allows me to make half a waffle if I need to.

Set the timer for 5 minutes.

The time may vary between 4 and 6 minutes depending on the type of waffle maker you have. A good way to know if the waffle is done is to check for steam. If you still see a lot of steam coming out, it’s probably not ready. You want to wait until there’s hardly any steam left.

Finally, use a cooling rack to rest the waffles on after they come out of the waffle maker.

A plate traps the heat underneath which then creates steam and makes them soggy, so use a cooling rack if you can.

Ingredients

  • 2cupsGreat Value Extra Fluffy Pancake & Waffle Mix
  • 1tbspmeringue powder
  • 1 1/2cups water
  • 1/3cupvegetable oil
  • 1 heaping tbspgranulated sugar
  • 1/2 cup frozen blueberries
  • 1bananacut into slices (optional)

Instructions

  1. Turn waffle maker on to preheat.

    In a large bowl, combine the pancake and waffle mix with meringue powder.

  2. Add water and oil and whisk until most of the lumps disappear.

  3. Add one heaping tablespoon of granulated sugar, whisk again until combined. Stir in frozen blueberries with a spoon.

  4. Pour about 1 cup of batter evenly onto the hot waffle plate, close, and flip over if using a flip-style waffle maker. Cook waffle for 5 minutes.
