Are pickles low FODMAP? | Karlijn's Kitchen (1)

The word pickles can be interpreted in different ways. It refers to any kind of vegetable that has been pickled.

But nowadays it is also a way to refer to a pickled cucumber or gherkin.

Pickled cucumber or gherkins have been tested by Monash University and can be found in the Monash University FODMAP app.

You can find them when you look under “Germany” in the country section. There it says that gherkins, pickled in vinegar are low FODMAP in a serving of 3 pieces. So pickles are low FODMAP indeed.

There is no maximum serving size mentioned, so probably you can also eat more than 3 pieces. But it is always good to test for yourself how you react to different amounts.

What about other pickled vegetables?

Monash University has tested some more pickled vegetables. The following pickled vegetables can also be eaten on the FODMAP diet:

  • Beetroot, pickled in vinegar: this food remains low in FODMAPs up to servings of 500 grams.
  • Artichoke, pickled in oil: a serving of 10 grams is low FODMAP.
  • Garlic, pickled in vinegar: at a serving of 10 cloves or 30 grams this food contains an average amount of fructose. So servings below 10 cloves are considered safe.
  • Jalapeño, pickled in vinegar: this food remains low in FODMAPs up to servings of 500 grams.
  • Onion, large, pickled in vinegar: a serving of 45 grams or 2 pieces is low FODMAP.

As you can see the preservation process has an impact on the FODMAPs in the different foods. Fresh onion and garlic contain a high amount of FODMAPs in a small serving.

But when they have been preserved in vinegar, you can eat small amounts of them on the FODMAP diet.

It is important to always drain pickled foods well before you serve them. I would always advise to try these foods in a small serving. When that goes well, you can increase the amount you eat and see how you react to that.
