Fortune cookies are not just for Chinese New Year anymore. They are fun for New Years, Valentine’s Day or any other special celebration that you want to add a personal touch to. You can hand write your fortunes on strips of paper or type them up in a document and then cut them into strips. You are only limited by your own imagination so have fun with it!
I created this fortune cookie recipe quite a few years ago when I had my Restaurant and Bakery – Sweet Kitchen & Bar. I had the idea to make them as little favors to give our guests on New Years Eve, with fun motivational quotes inside for the coming year. This year I thought they would make fun Valentine’s Day treats for friends and family. Just like homemade conversation hearts, you can personalize them with fun, silly or romantic “fortunes inside”. To make them even more festive, decorate the outsides with different colors of chocolate, sprinkles etc…

A fun project to make with friends or with your kids. Fortune cookies are easy to make but they are a bit time consuming because you can only bake two at a time or they will cool before you can shape them.
Ingredients
- 112gunsalted butterroom temp
- 170ghoney, agave or light corn syrup
- ½tspsalt
- ½tspvanilla
- ½tspalmond extract
- ½tspSesame oil
- 130gpowdered sugar
- 260g1:1 gluten free flour
- 3large egg whites(90 g)
- paper fortunes
Instructions
In the bowl of a stand mixer, beat the butter, honey, sesame oil, vanilla extract, almond extract and salt, on medium speed, until light and fluffy.
Add the powdered sugar and flour and mix on slow speed until smooth, scraping the bowl at least once.
With the mixer still running on low, slowly add the egg whites until they are completely combined and you have a smooth batter. The batter will be similar consistency to yellow cake batter.
Cover the batter and refrigerate for 1 hour.
Preheat the oven to 325° F. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment paper. Place paper, pencil mark down, on a baking sheet; set aside. Have a measuring cup or juice glass and standard-size muffin tin handy. *
Spread 1 tablespoon batter over each circle (as evenly as possible). Bake in the center of the oven 7-9 minutes or until lightly browned.
Let cool for 10 seconds, then using a thin off set spatula, invert one cookie and place a paper fortune in the center. Fold cookie in half over fortune strip so the edges meet; hold edges together for a few seconds. Place center of cookie over the rim of a measuring cup/glass; gently press ends down to bend cookie in middle. Set the fortune cookie in a muffin cup to hold its shape. Repeat with the second cookie. If the cookie hardens, return it to the oven for a few seconds. Repeat with the remaining batter and fortunes. Let the cookies cool completely before decorating or storing.

- To make the process faster and more uniform you can make a template out of a plastic lid and use an offset spatula to spread the batter evenly across it.
