This Greek raw zucchini salad is the perfect substitute for a pasta salad when you are on low carb or ketodiet. Full of all those delicious fresh flavors of creamy feta cheese, kalamata olives, tomatoes and a tasty Greek vinaigrette. This is a healthy and tasty low carb side salad and takes just 10 minutes to make!

If you have been reading my blog over the past year you probably noticed that I have quite of few Greek or mediterranean recipes. I guess I just like the flavor combination of the olives, peppers and feta as well as the bright flavor of Greek salad dressing.

Well since it is summer time, I thought I’d try to make a healthy and low carb salad using raw zucchini noodles. Icame up with this delicious Greek raw zucchini salad. It’s full of those Mediterranean flavors and best of all it only took 10 minutes to make.

It would be great for a quick keto lunch or as a colorful salad to take to a dinner party or picnic!

Recipe ingredients I used.

The base of the recipe is green zucchini noodles. You could also use yellow summer squash or acombination for more color!I used a thicker spiralized noodle but you can use a vegetable peeler to make ribbons or just slices if you don’t have a vegetable spiralizer.

The rest are simple ingredients – red onion slices, grape tomatoes or cherry tomatoes, kalamata olives, artichoke hearts, feta cheese. And for the simple Greek homemade dressing I used red wine vinegar, olive oil, salad, black pepper, fresh garlic clove and oregano.

You use any kind of vinegar you want. Sometimes I used balsamic, apple cider vinegar or even fresh lemon juice. Extra virgin olive oil is good to use if you have it.

While I used feta cheese for more of that Greek flavor, you could substitute with goat cheese, blue cheese or even Romano or Parmesan Cheese. You could also just eliminate cheese if you want this to be dairy free.

Let’s make some Greek raw zucchini salad!

Step 1: Make your zucchini noodles anyway you want. A note that the thicker size noodles stand up better to the dressing then really thin types.

You can also slice or make zucchini into ribbons with a vegetable peeler if you don’t have a spiralizer. Add to a large mixing bow..

Step 2: In a medium mixing bowl, whisk together the olive oil, vinegar, garlic and spices. Set aside.

Step 3: Toss the dressing with the zucchini noodles. Then add the other raw vegetables (olives, tomatoes, artichokes and red onion). Toss again and then top with feta cheese crumbles.

I don’t think you need to season with salt and pepper because it’s in the dressing and feta cheese can be salty. But feel free to do so if you think it needs it.

Step 4: Refrigerate until ready to eat. This is best when eating with the same day as it will accumulate liquid from the noodles over a few days. You can just drain it if you want.

To make this more of a meal you can add cooked chicken or shrimp. You can also add more crunch withnuts. I really like walnuts, pine nuts or pecans in my salads.

If you are taking this to a party you can add some lemon zest or herbs like fresh basil leaves or fresh mint leaves for garnish.

Greek Raw Zucchini Salad Recipe

This Greek Raw Zucchini Salad is the perfect summer side dish when you are on a low carb or Paleo diet.

Ingredients

  • ½ cup red onion, sliced thin
  • 2 medium zucchini, made into noodles
  • ½cup grape tomatoes, halved
  • ½ cup kalamata olives
  • 1 cup artichoke hearts
  • 4 ounces feta cheese crumbled (1 cup)
  • 2 tablespoons red wine vinegar
  • ¼ cup extra virgin olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon oregano
  • 1 clove garlic, crushed

Instructions

  1. Spiralize your zucchini to make noodles. Or you can use a vegetable peeler and then cut into wide noodles or ribbons. Place into a large bowl.
  2. Get out a medium bowl and whisk together the olive oil, vinegar, garlic, salt, pepper and oregano to make the dressing.
  3. Pour the dressing over the zoodles and mix well. Then add the rest of the ingredients except for the feta cheese and toss again.
  4. Top with the feta cheese and refrigerate until ready to eat. Store leftovers in an airtight container.
