You and I, we have a lot on our plate. I’ve got a gaggle of active kids, a small working farm, a website, and a handful of other daily responsibilities. You have your own “things” and whether they are similar to mine or not, we are more alike than different, and we are busy.

One of the sticking points in my life is feeding my crew. I have the greatest desire to feed them healthy and delicious food. I have this picture in my head of me in the kitchen with a frilly white apron on, chopping and dicing, sautéing and baking. As I present the meal to my perfect family seated at our perfect table, they all “oooh” and “ahhh” before they dig in and gobble it up with cheers of joy.

Unfortunately, I don’t have enough time to create the image that I see in my head. Plus, my day never goes as planned. Sometimes my plans just get derailed! So, instead of trying to achieve the unachievable, I decided to focus on real life. I learned that no matter how derailed my day gets, I can create a delicious, flavorful meal in a snap. I am here to share with you the anytime, anywhere, any moment, real food, real-life recipe that has saved my bacon on many occasions!

Simple Ham & Cheese Scones

As the weather cools and the apple cider and hot cocoa replace the popsicles and lemonade, if you’re like me, you are jonesing for some delicious and simple comfort food recipes. Thankfully,Smithfield®Anytime Favorites®has a host of delightful products like their cubed hamthat I used in my recipe to make mealtime simple.It’s versatile, flavorful, and high in protein; perfection. I pick mine up from the refrigerated meats section of my local Albertsons!

First up to bat, the ingredients:

2 cups flour

1 tablespoon baking powder

2 teaspoons sugar

1 teaspoon salt

4 Tablespoons cold unsalted butter cut into 1/2″ cubes

1 1/2 cups Smithfield® Anytime Favorites® Cubed Ham

1/4 cup chopped onion

2/3 cup grated cheese

1/4 cup milk

3/4 cup heavy cream

Next in the line up: Directions

1- Place oven rack in lower-middle position and preheat oven to 400 degrees Fahrenheit.

2- Place flour, baking powder, sugar and salt in medium-sized bowl and whisk. Add cubed butter and toss to separate the pieces. Smash the small butter cubes into the flour mixture with your clean hands until butter disappears.

3- Add Smithfield® Anytime Favorites® Cubed Ham, onion, and 1/4 cup of the shredded cheese (save the rest for later) to the bowl and mix until well combined. Add milk and cream and stir until a stiff dough is formed.

4- Lightly flour a clean work surface and pat / roll the dough into a round circle. Flatten the circle into roughly a 7″ round circle about 1 inch thick. Cut the round circle into 6 wedges and sprinkle with remaining shredded cheese.

5- Line a baking pan with parchment paper and carefully transfer the 6 wedges onto the parchment paper.

6- Bake about 25 minutes, or until puffed and light golden brown. Allow to cool for about 5 minutes and serve.

What is it about a bowl of flour that makes me want to get my hands dirty? You know, you can knead these scones with your hands if you are feeling adventurous!

Nice cubed pieces of ham give these scones massive amounts of substance. Don’t forget, if you don’t like onions, just leave them out with reckless abandon. You can also double the amount of onions. This recipe is flexible, and you can be too. I dare you.
