Do you have a couple go to dish for pot lucks and celebrations? A few years ago a friend introduced me to this amazing black bean, corn and feta dip. It’s so good that it has become one of my “go-tos”! In fact I often get asked, “Mary are you making the black bean and corn dip?” Plus I have started to keep the sweet vinegar dressing on hand because it is perfect for salads too.

Simple Black Bean, Corn and Feta Dipwith Sweet Vinegar Dressing
So if you need to bring something to a baby shower or a Super Bowl bash, this is the dip to choose. You just can’t go wrong. It has that sweet and salty appeal and is good for you too! My nieces absolutely love it. It is a crowd pleaser for many palates. And may I suggest sweet potato tortilla chips as the vehicle for devouring this tasty dip?! Black Bean, Corn and Feta Dip Recipe
This amazing black bean, corn and feta dip has that sweet and salty appeal and is good for you too! It is a crowd pleaser for many palates, plus the sweet vinegar dressing is perfect for salads too.

Course: Appetizer, Side Dish, Snack

Ingredients
- 1 15 oz can corn drained
- 1 15 oz can black beans drained
- 1 5 oz pkg feta cheese
- 2 green onions chopped
Sweet Vinegar Dressing
- 1/4 C Oil
- 1/4 C Vinegar I prefer white. But you can use apple
- 1/4 C Sugar or sugar substitute
- Dash of Garlic Salt to taste.
- Store in refrigerator and shake before pouring.
Instructions
Drain corn and rinse black beans, set aside
Chop 2 green onions
Combine corn, black beans and onions in a bowl
Drizzle dressing to taste (appox 1/2 cup)
Serve with favorite chips.

What type of oil? Olive Oil? Something else?

Great question. I use regular old vegetable or canola oil. But you could experiment with others.

I have made this so many times! We LOVE it! For the dressing I use a little sugar (maybe a teaspoon) and squirt a few squirts of Stevia in for the sweetness. It’s always divine and you don’t have to feel guilty. Thanks so much for this recipe!Reply

Thanks Aimee, it is quite addicting. I don’t have the specific nutritional info other than just accounting for each ingredient- like the corn, beans and feta. You can use a reduced fat variety of the cheese. And I would suggest maybe making the dressing with your fave sugar substitute (since it does have quite a bit of sugar in the dressing).
Sorry that’s not exact, but hope that helps. My Aunt has done WW for years, maybe I can have her look at this and tell me how many points it would be.

So here is what my Aunt said, hope it helps!
Everything but feta cheese, oil, and sugar are 0 points! 1 oz feta is 3 pts, olive oil 1 tsp=1 pt, 1 tsp sugar =1pt! So add up those ingredients and divide by serving size!
