    Beet brine is the deep red liquid that pickled beets rest in. It may sound weird, but pickle brines actually have a long history with classic co*cktails like the Martini, Bloody Mary and Pickleback. In drinks, we use beet brine to give our drinks salty, tangy and umami-rich notes as well as a bit of that beautiful deep red beetroot color.
