There's a ton of hype for the Ronto Wrap in Star Wars Galaxy's Edge, but the vegan ronto-less garden wrap, featuring Impossible sausage, is rivaling it as of late. Found at Ronto Roasters in Disneyland's Galaxy's Edge, this wrap is a flavor explosion on par with the best bahn-mi ever. Just check out all this plant-based goodness:

Disneyland has some seriously awesome plant-based food, like the Impossible Spoonful found in Avengers Campus. Yes, we may be meat-eaters, but we've come to love Impossible meat thanks to Disney Parks creative dishes. So when we saw Impossible Sausage in our local grocery store, we were pretty pumped! Now we can recreate some famous Disney meals, like the breakfast sha-warm-up at Avenger's Campus.

For those who don't know, Impossible sausage comes in both savory and spicy varieties. The savory form of sausage tastes a lot like the Impossible "meat" that you may already be familiar with. The spicy is much more flavorful, like a medium Italian sausage. We liked the spicy best for our ronto-less garden wrap copycat recipe. Because the wrap features long rectangles of sausage, we formed our sausage into long 7" x 1.5" rectangles before frying.

What's in a Vegan Ronto-less Wrap with Impossible Sausage?

There are so many strong, flavorful components in the ronto-less garden wrap. Firstly, let's examine the spicy kimchi slaw. For our recipe, we used a purchased a jar of vegan kimchi, which is already tangy and spicy, and dressed it up. Beware the jar of kimchi! Because carbon dioxide is added during fermentation, it can expand and overflow when opened (like a shaken-up bottle of pop). It also smells very strongly of cabbage, so it can stink your house up pretty quick. It's a small price to pay for the benefit of consuming a fermented food, which is good for gut health!. To make our kimchi slaw, we added cilantro, purple cabbage, carrot, and red pepper.

The ronto-less wrap with Impossible sausage contains a spicy gochujang spread. Since mayonnaise is not vegan (contains egg), we use Follow Your Heart brand Vegenaise. To make it spicy, we use our favorite gochujang sauce, Little Goat Went to Korea tangy and spicy everything sauce. It's the most balanced gochujang sauce I've ever tasted. Of course, it's created by Top Chef Stephanie Izard, so you know it has to be good! Little Goat has an entire line of sauces, spices, and crunchy toppings that we love.

Probably the most fun we had creating this recipe is realizing just how easy it is to make our own pickled cucumbers. Because the ronto-less garden wrap uses sweet pickles, we added sugar to our pickling solution (vinegar and salt). It's really that simple. We are going to make an effort to keep homemade pickles in our fridge more often. They are a perfect accompaniment to a burger, sandwich, or a homemade charcuterie board.

Once you assemble everything into a vegan pita, this wrap is a flavor explosion coming from all directions! Think about it: savory sausage, crunchy kimchi slaw, sweet pickled cucumbers, spicy mayo...all wrapped in a fluffy pita! It is a meal worthy of the majesty of Disney's Galaxy's Edge.

Ingredients

  • 1 cup sliced cucumbers (we used baby cucumbers), sliced 1/8" thick using mandoline
  • 1/2 cup sugar
  • 1/2 cup white vinegar
  • 1/2 teaspoon salt
  • 1 cup vegan kimchi. We used Seoul vegan original kimchi.
  • 2 tablespoons chopped cilantro
  • 2 tablespoons shredded purple cabbage
  • 2 tablespoons shredded carrot
  • 2 tablespoons sliced red pepper
  • 1/2 cup Follow Your Heart vegenaise
  • 1.5 tablespoons Little Goat Went to Korea sauce (gochujang sauce)
  • 1 14 oz. Impossible ground sausage, thawed if frozen (savory or spicy)
  • 4 Kontos gyro bread (vegan)
  • Dried dill, to garnish pickles
  • Black and regular sesame seeds, to garnish wrap

Instructions

Make the Pickled Cucumbers

  • Slice 1 cup of cucumbers about 1/8" thick (use a mandoline if you have one). Add the cucumbers to a bowl.

  • Add sugar, vinegar, and salt to a small saucepan.

  • Over medium heat, simmer until sugar is dissolved, stirring occasionally.

  • Remove from heat and pour the solution over the cucumbers. Refrigerate until ready to assemble wraps.

Make the Kimchi Slaw

  • Carefully open your bottle of kimchi over the sink as it may expand and overflow like a shaken-up bottle of pop.

  • Put 1 cup of kimchi into a bowl and add 2 tablespoons of each: chopped cilantro, shredded purple cabbage, shredded carrot, and sliced red pepper. Stir until combined. Refrigerate until ready to assemble wraps.

Make the Gochujang Sauce

  • To 1/2 cup vegenaise, add 1.5 T Little Goat Went to Korea sauce. Stir until combined. Refrigerate until ready to assemble wraps.

Make Impossible Sausage Patties

  • Portion Impossible sausage into 4 rectangles, each about 7"x1.5" long.

  • Fry Impossible sausage patties in cooking oil until browned on both sides.

To Assemble Wraps

  • Warm the pita bread (or gyro bread) briefly on the stovetop.

  • Put the gochujang sauce on the pita bread.

  • Put the Impossible sausage patty on top of the gochujang sauce.

  • Put the kimchi slaw on top of the sausage.

  • Put the sweet pickled cucumbers on top of the kimchi slaw, and (optional) garnish them with dried dill.

  • Optional: garnish with sesame seeds.

  • Enjoy!
